A Strawberry Cupcake Tea Party

Hello again!

My mum and brother popped in for afternoon tea today and I whipped up some strawberry cupcakes for the occasion! (And by ‘whipped up’ I mean it took me like two hours to bake them because I’m super slow).

Vanilla cupcakes with strawberry icing

I found the recipe in the BBC’s Good Food magazine, but basically they’re just simple vanilla cupcakes not unlike these – the strawberry is only in the icing. Grab a double-fistful of strawberries (about 5oz), throw them in a blender with the juice of a quarter lemon, cream up a stick and a half of butter and then add 2 ½ cups of icing sugar and mix it all in. It takes a heck of a lot of creaming but mine ended up fantastic. But just so you know – this makes large quantities of icing. The recipe included the cakes and icing in one, stating a yield of 12 cupcakes, but I comfortably got 24 cakes out of the batter and I’m pretty sure the icing will stretch that far too. So maybe half the quantities or something, I dunno. Or freeze the extra? I bet tiny balls of frozen icing would make an awesome midnight treat somewhere down the line…

Tea and cake with my family

So now I have 16 cupcakes to get through (yes, I did say I started with 24… We got through 6 between the three of us and I took 2 more to work for the pub crawl guides). I think I’ll take them to work tomorrow and share them out amongst my colleagues. I imagine this will either make me everyone’s best friend or the sad, lonely girl who bakes a lot. Which do you think it’ll be?
